I love food—always have!
I'm fascinated by how food influences life. It brings people together—across all cultures. We all have to eat!
For a long time, I was simply passionate about good food. I became fascinated by nutrition when I realised the enormous impact that everything we eat and drink has on our health and wellbeing.
This was my eureka moment and inspiration for becoming a dietitian. Food really is the elixir of life!
Today, my motivation is to share this knowledge—to help people optimize their health through good nutrition and feel their best in the process.
My nutritional journey and experience….
The Beginning: Dublin
It all started in Dublin, Ireland. During a childcare course, I took a module on nutrition. That was the moment I realized how directly nutrition influences our health. I was fascinated—and still am.
Education in America (1997–2001)
In 1997, I began my studies at Michigan State University in East Lansing, Michigan. In the summer of 2000, I graduated with a Bachelor of Science in Dietetics—with honors. This was followed by an intensive, almost year-long internship at the University of Michigan Hospitals in Ann Arbor, Michigan, after which I was permitted to sit the registration Examination for Dietitians, which I passed in 2001. This was the foundation of my career as a registered dietitian.
First Job in the USA (2001–2003)
After receiving my certification, I worked as a registered dietitian at the Onslow County Health Department in Jacksonville, North Carolina. These years gave me my first practical experience—and the conviction: Nutritional counseling works when it's personal.
Family Time and International Relocation (2004–2006)
Self-Employment in Ireland (2006–2011)
In 2006, I returned to my native Ireland (with my young children and husband). In 2008, I opened a private practice. Here, my work became more diverse: individual consultations and various nutrition courses at primary and vocational schools. I learned what clients truly need—not just theory, but also practice!
New Beginning in Germany (2011–present)
In 2011, I moved to Germany with my family. While waiting for my qualifications to be recognized in Germany, I taught cooking classes at the local adult education center and offered volunteer nutritional counseling.
After receiving my certification in Germany, I explored various areas of dietetics. At the easylife weight loss center in Mainz, I further developed my understanding of weight loss. In 2018, I began teaching an English course (focusing on nutrition/dietetics) at the Nutrition and Dietetics Training Center in Mainz, a course I continue to teach annually. As a registered dietitian at the Dr. Horst Schmidt Clinic, a large interdisciplinary hospital in Wiesbaden, I was able to deepen my clinical knowledge. At Stimmel Sports, a fitness center specializing in general health and exercise, I finally combined nutrition with fitness and holistic health.
My true strength lies in personalized, one-on-one consultations. That's why I returned to private practice in 2025—precisely where my expertise is most effective and which I am very happy about.

Outside of my work, I try to dedicate time to the practices that keep me grounded, inspired, and balanced. These aspects of my life are not separate from what I offer—they are an essential part of who I am.
I find joy in the simple moments of everyday life: in my garden, where I mindfully observe nature and appreciate its beauty, photographing plants, enjoying a cup of tea on the terrace, or cooking and eating nutritious and tasty food mindfully.
Time spent in nature gives me strength and clarity—whether on walks through fields, forests, in the mountains, or by the sea. Traveling and experiencing different cultures also enriches my perspective on nutrition, lifestyle and wellbeing
Movement like Pilates and yoga helps me reconnect with myself. I also value quiet moments with a good book, listening to music or a podcast, and deep conversations.
Time with my family and friends is especially important to me—it gives me a great sense of connection and joy.
I am convinced that true well-being arises when we connect all aspects of our lives. This holistic approach shapes me, my work and the support I provide to my clients.
